Serves 2 (289 calories each/579 total)

1 raw large zucchini (~18 calories)
1/2 cup Prego Traditional Spaghetti Sauce (70 cal)
20 slices Hormel – Turkey Pepperoni Slices (82 cal)
1 cup Go Veggie – Mozzarella Style Shreds (270 cal)
2 tsp Go Veggie – Parmesan Grated Cheese (20cal)
1 tablespoon Oil – Olive (119 cal)
Spices – salt, pepper, garlic powder, onion powder, red pepper flakes…sometimes I add hot sauce…add whatever you would like really
Pre-heat oven to 400 degrees.
Cut zucchini in half. Brush each half with olive oil.
Sprinkle with salt, pepper, garlic, red pepper flakes, onion powder to your liking.
Bake in 400 degree oven for 20 minutes.
Take out and use a fork to scoop out the middle a little bit to break it up and allow the water to come to the surface. Don’t remove any of the center, just stir it up really.
Put back in the oven for 10 minutes to dry up some of that water.
Then take out, add sauce, cheese, and pepperoni slices. Sprinkle with soy parmesan cheese on top of pepperoni.
Broil on high for 1-2 minutes.
